Ingredients (serves 8-10):
Sweet Potatoes 4 ea
Heavy Cream 1 cup
Butter 1 stick
Kosher Salt 2 tsp
Candied Pecans (Recipe below)
Preparation :
1.Clean and peel the sweet potatoes.
2.Dice the sweet potatoes into 1” pieces
3.Combine all ingredients in a medium saucepan.
4.Place the saucepan over medium heat and cover.
5.Simmer the sweet potatoes until tender (about 25 minutes).
6.Using a potato masher, mash all ingredients together.
7.Taste and add salt if necessary.
8.Place the sweet potatoes in a serving dish and top with the spiced pecans (recipe below).
Spiced Pecans
Ingredients (serves 8-10) Pecan Halves 2 cups
Egg whites, LG 1 ea
Smoked Paprika 1/4 tsp
Cayenne Pepper pinch
Sugar 1 Tbsp
Preparation:
1.Preheat oven to 300° F.
2.Whisk egg whites until foamy. Add sugar and spices. Mix well.
3.Using a fork, place in a single layer on a sheet pan (lined with foil or parchment) and bake 30 minutes or until golden brown.
Chef's Note: This recipe makes more Spiced Pecans than you will need for the sweet potatoes. They are a delicious garnish for salads and will hold for three days in an airtight container.
